Sad Meats | Munchies | Vice

I photographed some sad German cold cuts for my friend in food Phillip Turo. I hope you'll agree with me (and him) when I say there's a strangely ethereal quality to these slices when viewed up close. They are the sort of thing I could imagine tear-stained angels or multi-eyed extraterrestrials eating in coloured gas clouds at the edge of our galaxy. Or even that these meats were the gas clouds in which they were floating, eating something else.

Either way, please look upon them and feel becalmed.

And you can read Phillip's thoughts on the Vice platform, Munchies.

Things of Eat

That I have eaten. Not the one directly below though. I wouldn't eat that even if I could.

Things I Ate Recently

Not including any people that are in these photos. Amongst them - bun cha rieu (thanks to Mark at StickyRice for the virtual heads-up), california rolls, sashimi, and crumbed pork with leek. Xin moi. Itadaki mas.

Some Recent Eats

Lately I have had the honour to photograph, and eat, a variety of Dim Sum, and a selection of snails:

A Word In Your Mouth

As someone who can be something of a glutton, one of the many great things about working for a magazine is all the food I get to eat. Here is a selection of some of the dishes that recently met their doom twixt my jaws in the interests of illustration. Allow me to list the fallen, the lost (in no particular order): oysters, clams, high-class vegetarian offerings, blood, kimchi, spicy chicken, spring rolls, and (not) the nest of a bird. Rest In Peace O Toothsome Fuels.

Mi Tom Ca Hoanh Thanh

Best noodles in the world. Cholon My Gia, 71 Kim Ma, Ba Dinh, Hanoi, Vietnam, The World.

Commercial: Ola de Tapas

A slinky selection of tapas and a deep red wall from local Spanish restaurant, Ola de Tapas, in Hanoi's old quarter.

Recent Tearsheets

From the July issue of The Word. Che, sticky rice, various street foods - this month involved a lot of eating.

Highway 4: Dining

Some shots of diners at the newest branch of Highway 4 Restaurants at 25 Bat Su.

Highway 4: Market Trip and Cooking Class

For anyone who wants to learn about Vietnamese food, its ingredients and how to combine them into traditional dishes, Highway 4 are running cooking classes. They'll take you to a local market where you can get your fingers and noses into the fresh produce, and then back to the restaurant by cyclo to cook up some edibles under the wise eyes of their chefs.

Highway 4: Training Manual and Food

Summer menu coming soon at Highway 4. Spoiler: contains some duck spring rolls which are mighty toothsome.

Cheese. Just Cheese.

As you can see from the title of this blog, I need cheese. I love the stuff with an insane and sometimes frightening passion. Spend a day with me and the chances are at some point I'll start gibbering at you about it, for hours - it's never far from the surface. That's exactly what happened to Ian from The Word on our recent trip to Halong Bay, and he had the good sense and kindness to assign me to the next issue's food section which will be on CHEESE. He also kindly agreed to give me a cheese buying budget, so the last few days I visited the local cheese sellers to purchase my top ten cheeses of the moment with a stupid grin on my face. At home yesterday they were lovingly unwrapped before I spent hours circling and photographing them, followed by more hours at the computer sweating and dribbling in front of the photos. Today we had a small cheese lunch at the magazine office and everyone had the questionable honour of witnessing my bug-eyed cheese-love firsthand as I crammed morsel after morsel into my moaning maw. Embarrassing. Here are photos of 9 of the 10 cheeses. Unfortunately one of them - the Cambozola - got swallowed before ever being captured on camera. Evidence of a serious cheese addiction right there, that and a mind like emmental. Thanks again to Ian for putting me on this. Best assignment ever. Enjoy.
